We have a highly trained kitchen team who feel passionate about what they do, applying their expertise and pride to every dish. It is their desire to provide customers with a taste of quintessential French cuisine and complete satisfaction.

We ensure our kitchen team is educated not only in mastering culinary techniques but also in understanding the importance of choosing low carbon emission options, blending the artistry of cooking with a commitment to a sustainable future.

Seasonal and Fresh Produce

Our menus revolve around the availability of seasonal and fresh ingredients. Our commitment to seasonality ensures that with every dish our guests experience the very best the changing seasons have to offer.

For instance, all our berries are sourced from Hugh Lowe Farms in Kent, the Garden of England. The berries are cultivated, handpicked, and packed directly at the farm before making their way to our restaurant. Our Group Executive Chef, Trevor Tobin, recently embarked on a visit to the farm, immersing himself in the art of plantsmanship and witnessing first-hand the cutting-edge technology behind the growth of these exceptional berries.

From Market to Plate

Our General Manager Mauro and Head Chef Pierre make a monthly trip to the renowned Billingsgate Fish Market. Here, they carefully select fresh seafood for several of our dishes, ensuring that our guests experience the best flavours that the sea has to offer. 

Supporting Local

Where possible, we choose to support local. For instance, each morning our General Manager Mauro visits a family-run artisan baker in North London — a hidden gem renowned for its exceptional sourdough. With an eye for quality, he personally selects a batch of freshly baked loaves for the day ahead. By sourcing locally where we can, we reduce food miles, cut emissions, and shrink our carbon footprint.

Responsible Farming Practices

We’ve forged meaningful partnerships with farmers and growers that we know and trust. Macken Brothers Butchery supply us with high-quality, naturally fed meat from farms across England, Scotland, Wales, and Ireland. The meat is aged on their premises, ensuring it reaches the perfect level of tenderness and flavour before we prepare it for our guests. We understand the significance of provenance and animal welfare and can guarantee full traceability from the farm to your fork.

Reduced Food Waste

We promise to minimise food waste through meticulous planning, portion control, and creative ingredient use. This not only reduces carbon emissions but also supports a more sustainable food system.

For Everyone

Our mission isn’t only to provide delicious food, it’s about making it accessible to everyone. Regardless of dietary needs or preferences, we strive to ensure that everyone feels safe and welcomed when dining with us. With great care and consideration, we have meticulously crafted our menus to actively exclude any common allergens.

Boutinot Wine Collection

Our extensive wine list at Palm Court Brasserie is sourced through Boutinot Wines, an English company  that works with a large network of over 150 world-class wine producers and boasts a diverse portfolio comprising more than 1600 wines from various regions around the world. 

In addition to sourcing wines from other producers, Boutinot have vineyards of their own in Italy, France, South Africa, and England. 

Our General Manager Mauro takes great pride in collaborating closely with the team at Boutinot to handpick niche bottles of wine from top producers around the world.

Our menus prioritise ingredients with a low carbon footprint. Our selections are chosen with care, focusing on locally sourced, seasonal, and sustainably produced items where possible.

Each season, we assess our menus and operations to identify areas in which we can further reduce the environmental impact of our offerings.
